These sweet treats were inspired by the charming world of Stars Hollow, our favourite fall-coded, fictional town, where crisp weather and cozy sweaters reign supreme. Cinnamon sweetness makes our take on these viral, FoodTok™ goodies the perfect pairing for Lorelai and Rory’s favourite food group (aka coffee).

ICING
- Preheat oven to 375° F. Line Sheet Pan with Sheet Pan Liner.
- Using a stand mixer (with paddle attachment) or hand mixer on low speed, combine mix, 1⁄2 cup butter, egg, 1 tbsp milk, 2 tsp cinnamon, and 1 tsp vanilla extract until a uniform dough forms.
- Using 2 tbsp as a guide, roll dough into 15 balls and arrange on pan, spacing 1" apart. Using your thumb or the back of a small spoon, make a small indent in the centre of each cookie. To help the cookies keep their shape while making an indent, hold the sides of the cookie and press any cracks that form on the edges back into place. Chill in fridge 5 min.
- Meanwhile, in a small bowl, combine flour, brown sugar, melted butter, and remaining 1⁄4 tsp cinnamon. Mixture should be crumbly. Divide among cookie indents.
- Bake 13–14 min or until edges are set. Let cool on pan 5 min.
- Meanwhile, whisk together icing sugar, 1 tbsp + 1 tsp milk, and remaining 1⁄4 tsp vanilla extract.
- Transfer cookies to Cooling Racks. Place racks back on pan. Drizzle icing over cookies; let the icing set and the cookies cool completely before serving.
